So, I was using this recipe, but (of course) made a few modifications. I added about half an onion, in big pieces. I didn't have any cumin seed so I just added a pinch more ground cumin. I also, for some reason, couldn't find cayenne pepper so I used paprika & a bit of chili powder instead.
And 45 minutes later???
So pretty, and soooo tasty. I think I like the purple sweet potato even better than the regular! It's a lot sweeter & has a richer flavor. YUM! Would have been even better if I'd had the cayenne.
